Green Goodness

I always start craving GREEN in winter.

Greens like spinach, arugula, avocado, lettuce, peas, asparagus, seaweed, and yes, even kale. You too? Well there’s a reason.

Dark green vegetables are a rich source of minerals including iron, calcium, potassium, and magnesium. They also provide important vitamins, including vitamins K, C, E, and many of the B vitamins.

Now, this might be kitchen table dietetics but, something tells me the dead of winter + the hight of flu season, might account for craving the food thats jam packed with nutrients.

Anyway, below is my quick green fix I throw together nearly every day.

My Simple Green Goodness Salad:

  • leafy greens

  • celery

  • avocado

  • fresh peas (thawed frozen ones work)

  • green apple

  • salt & pepper

  • vinaigrette of choice
