Spicy Summer Peach Chicken Braise

  • 1 TSP Chili powder

  • 1 TSP Cumin

  • 1 TSP Paprika

  • 1 TSP Salt

  • 4 Chicken Breasts (Thighs work too)

  • Olive oil

  • 2 TSP Butter

  • 5 Shallots

  • 3 Garlic pieces (or a TBS of puree)

  • 3 Peaches (or large can)

  • 2 TBS Lime juice

  • 2 TBS Honey

  • Garnish: Lime wedge or chopped cilantro

DIRECTIONS:

TIME TO COOK: 30min-1hr (depending on seasoning time)

Pop your chicken in a plastic sealing bag with the spices, seal & shake the bag to fully coat the chicken. This can sit & season on your counter for 20-30mins for deeper flavor!

Heat your pan/pot (I use my deep 13in pan for this dish) on high heat, then add a little oil and brown your chicken. Remove from pan and rest the chicken on a plate while you make the peaches.

Add butter to your pan, then add your chopped shallots & garlic to the remaining oil & butter in the pan. Proceed with browning the shallots & garlic. When the shallots are soft, add the peaches, and stew down on med-low heat.

When the peach shallot mixture is stewed down & soft, add the honey & lime juice, and stir in.

At this stage, I will add the browned/spiced chicken back into the pan, nestled into the peach mixture. Cover the pan, and turn heat on low, and let sit for about 10mins until it looks like the chicken has reheated, and the peaches are soft and a sauce has formed.

SERVE:

I will typically slice the chicken for serving (a habit stemming from serving toddlers!) along with the peach sauce. Garnish with cilantro or lime wedges.

This can be served alongside rice, roast potatoes, baked sweet potato, or a robust salad for a complete meal. I served with a bowl of avocado & feta when I photograph this recipe, for a light summer meal!
